Chickpea & Smoked Almond "Tuna" Salad Sandwich

(Makes 6-8 sammies)

I found this recipe in The Thug Kitchen recipe book (now rebranded as bad manners - I think?). That cookbook is so funny!  You should check it out.  I often tweak recipes to make them simpler and also to taste.  

Instead of making my own smoked almonds as was instructed in the cookbook I bought the almonds already smoked because it takes too dam* much time to do it yourself - lol. If you are wondering why all of the swearing - that’s how The Thug Kitchen cookbook reads and I find it hysterical. So, I apologize if you are offended.

I often serve this badas* sandwich up on Elevate trips and events.  I like to double the recipe so i have plently leftover to enjoy during the week.

Ingredients

3/4 cup smoked almonds
3 cups cooked chickpeas
1 avocado
1  lemon juiced
1/4 of a red onion chopped
1/3 cup chopped fresh dill
1 rib chopped celery
1 to 2 teaspoons of your favorite hot sauce
1/2 teaspoon salt
Ground pepper to taste
Bread, toasted
Lettuce and tomato

Place smoked almonds in food processor and blend until chunky. Add all remaining ingredients except the bread, lettuce & tomato in a food processor.  Blend until that sh*t is chunky ;)

You can make this ahead, but leave out the avocado.  Mix in the avocado at the last minute before serving.

Put sandwich together and enjoy!
